From New Zealand’s 8 Wired Brewery comes Brett Brux Brut. The name comes from the fact that it was fermented with brettanomyces bruxellensis (yeah, try that one in a spelling bee), a wild yeast that gives the brew a rather funky dimension. That, along with bucketfuls of hops gives a dry, funky, hoppy flavour profile.
