A late-2016 addition to anCnoc’s Peaty range – Stack peated to 20PPM and was drawn from American ex-bourbon barrels before being bottled at 46% ABV. The name comes from the last step in the peat-gathering process, where a great pile of peat slabs would be assembled and left to dry before being burnt.
Nose: Vegetal oak, honey’d cereals and a helping of flamed orange peels.
Palate: Lemon cheesecake with a thick biscuit base, dark chocolate, earthy peat smoke growing as it develops.
Finish: Still quite fruity, though well balanced with the peat smoke.
