Balcones were the first to use blue corn to create a corn whisky, and now they’ve gone and created a bourbon using blue corn in its mashbill too! A big, bold expression from the distillers in Waco, Texas – give it a drop of water to bring out more rich vanillas on the palate and finish…
Nose: Good whiffs of barrel char and treacle tart up front, followed by notes of buttered popcorn and cherry cola. Maybe a little touch of black liquorice. A drop of water brings out an enjoyable meatiness to it.
Palate: Oily and intense with pepper and nutmeg as it opens, developing red apple and chewy toffee notes. Chocolatey elements, too.
Finish: Lingering liquorice and sweet vanilla. A final touch of white pepper persists.
