The first cask finished release from The Spirit of Yorkshire Distillery’s Filey Bay range. Following an initial maturation in bourbon casks, it was transferred to Spanish hogsheads which previously held Moscatel for a finishing period. Just 6,000 bottles were released, full of creamy tropical sweetness.
Nose: Brown sugar and ripe tropical fruit, with tinned pineapple and nectarine, followed by white pepper and orange peel.
Palate: Candied orange and muscovado sugar, with baking spices, dusty cocoa and crisp apple, with a kick of ginger.
Finish: Dried banana and cooked pineapple, with toasty oak spice.
