A Cask Strength Collection bottling of heavily peated single malt Scotch whisky from the Jura distillery on the eponymous island, drawn from a pair of bourbon barrels. This was distilled in December 1989 and left to mature for 26 years, until Signatory came along and bottled both barrels in June 2016. Only 338 bottles were produced.
Nose: Freshly baked cookies and peppermint, followed by a generous slab of coastal peat.
Palate: Wet grass adds to the peat notes. Fresh fruit develops on the mid-palate (think cherries and apples).
Finish: Buttered toast and some crystallised ginger.
