A stunning bottle of 23 year old Clynelish, distilled all the way back in November 1995. It spent many moons in a single sherry butt (#11236, if you were wondering) until May 2019, when it was bottled by Signatory as part of the Cask Strength Collection. The Highland single malt weighs in at 57.7% ABV, with the cask yielding only 607 bottles.
Nose: Caramelised pear, toasted oak and burnt toffee, with salted caramel, orange peel and smoked wood.
Palate: Salted butter on rye bread, with well sherried autumn fruits, oak spice, black pepper and gingerbread.
Finish: Chocolate covered candied ginger, a pinch of sea salt and smoked dried herbs.
